Even with the name branding of "South Park" (and Trey Parker and Matt Stone), this documentary still feels like an extended episode of any 'restaurant-comes-back-from-disaster' reality show.
While Trey and Matt are doing well with their new Paramount deal, even the massively over budget multi-million price tag on this rebuild is a lot for them.
They comment that a smart businessperson would have cut their losses after seeing the extent of Casa Bonita's damage after it went bankrupt, but even that doesn't deter them. And all the sunken money, constant delays, and frustration is worth it.
While "South Park" (and the season seven "Casa Bonita" episode) will be the hook that gets people watching, a lot of this documentary involves Trey and Matt working out how to revive their favourite Denver childhood restaurant (with some helpful background information for those unfamiliar with its history).
It's not just a restaurant: it's an entertainment experience for families, which means there's a lot to get right before the restaurant's opening day - with the kitchen staff, wait staff, actors, animatronics, divers needing rehearsal and preparation time.
Though Trey can come off as a perfectionist and a hard taskmaster (which is why "South Park" is still high quality after nearly three decades), there's a sad moment at the end when he realises he's become a distraction and can't enjoy the restaurant that he worked so hard to save.

Plot summary
Casa Bonita opened in 1974 in an unassuming strip mall. The massive "Disneyland of Mexican restaurants" is an Old West and Acapulco-inspired fever dream made famous by its indoor waterfall, cliff divers, and haunted caves, and was featured in a classic 2003 episode of South Park. When its creators, Trey Parker and Matt Stone, learn that Casa Bonita might close its doors for good, they attempt to preserve a crumbling piece of their childhood and Denver history.
